Oye. It has been six months since I wrote...
There has been very little knitting, small progress in the garden, and quite a few food recently. I credit all the work stress. Let's start with this morning, then work our way back... way back.
What to do with more raspberries? I still have raspberry jam in the cupboard from last year. Perhaps I need a food mill, to make raspberry puree ...
This week, G's extra Costco item was Blueberries. A lot of blueberries. Laying in bed last night, I wondered what to do with all the blueberries, muffins, pound cake, scones ... This morning, I decided on muffins. I added lemon zest and a light lemon glace to the Martha Stewart muffins. G thinks they are pretty good.
Yesterday, Saturday, I made Split Pea and Coconut Pudding in the morning, using this recipe I found on the Intenets. One of my favorite as a little kid, we used to see them at dim sum in HK. I have not spotted them here in the States. This is the first time I've tried making it. The split pea was slightly underdone. The Kara Coconut Cream was very flavorful. Overall, passable for a first try. I would definitely use this brand of coconut products again.
And... by work peep request (plus we shipped a significant mult-months project to QA), I made lemon bars using Ina Garten's recipe. The bars are sweet, tart, and slightly gooey with the butter short bread crust. I would definitely use this recipe gain. Hope the work peep likes them.
Finally, last weekend, I reached way back and made Pickled Pigs Feet. This comfort food goes back to my childhood years. Mom used to make it for neighbors and relatives ladies with newborns. (No significance here). Grace Young has a fabulous recipe in her The Wisdom of the Chinese Kitchen book. It is exactly the way I remembered it. It took a couple of trips, but I did find the sweeten black vinegar that I needed. So. Good. Comfort. Food.
All the cooking, baking (and ahem, not to mention retail therapy), has helped. With the fridge full and a day of Sunday chores ahead, it is time to return to regularly scheduled ... life.
